Pairing Refreshing Summer Mocktails with Our Meals

Two things we love about summer are the cool icy drinks and the lovely fruit choices we have here in Denver! Cherries, blueberries, peaches, strawberries, plums! YUM!! When we can combine the two on a 100-degree day, it makes for a lovely afternoon Mocktail. And what better way to start or finish off your Modern Plate meal?

Below we have included two fantastic ideas, but the varieties really are endless, and I have included some tips for taking your favorite fruity drinks to the next level.

First, we want to give you a recipe for simple syrup. I love simple syrup because it is easy to make, and you can flavor it in so many ways. Add orange juice in some of the water, add some zest, or heat it with cardamom pods, ginger, or basil. Just remember to strain it before you put it in a bottle in your fridge.

Simple Syrup:

Equal Parts sugar and Water. We like to do 2 cups of each. Cook over medium heat until the sugar dissolves, cool completely, strain any additions, and put in a glass jar. Label it with the date, and it is good in the fridge for a month. You can use ginger ale in place of the sugar and water. Sugar the rim of the glass. Make ice cubes out of fruit juice, and this will keep your drink from being watered down.

Now for the Mocktails, which, as you will see with the first recipe, is just a regular drink that you elevate a little bit, with ingredients and presentation! It is a great one to substitute the simple syrup in. We have also included a non-sugar Mocktail with all of the health benefits of tart cherry juice.

Strawberry Lemonade Mocktail

If you are looking for a perfectly easy-to-make mocktail, this strawberry lemonade mocktail is it! It is easy to make and enjoy whether you are at a party or just at home enjoying the weather outside!

Ingredients:

2 cups of lemon juice (approximately 8 lemons)

8 medium strawberries, washed and hulled

2 tablespoons sugar

1/2 cup to 1.5 cups of sugar

6–7 cups of water

Instructions:

Squeeze lemons (straining seeds and pulp) to make 2 cups. Set aside.

Hull strawberries, add to a food processor.

Puree for a few seconds.

Add 1 cup of water and 2 tablespoons of sugar.

Blend until it forms a liquid

Add strawberry juice to lemon juice in a large pitcher

Add 1/2 cup to 1 cup of sugar depending on your preference

Add 5-6 cups of water and mix well

Taste and add extra sugar, if needed

Chill and serve over ice

Add sugar to the rims of glasses before pouring lemonade.

Tart Cherry and Lime Juice Mocktail

Ingredients:

½ ounce tart cherry juice concentrate

½ ounce freshly squeezed lime juice, from 1 lime

4 ounces seltzer

Garnish: lime slice or twist

Directions:

Fill a cocktail shaker with ice. Add the cherry juice concentrate, lime juice, and seltzer.

Shake until well chilled for about 15 seconds—strain into a cocktail glass.

Garnish with the lime slice or twist and serve.
